However, at $2-3 per 16 oz. bottle, it wasn&#8217;t exactly something I&#8217;d buy to keep on hand all the time.<\/p>\n<p>Note I didn&#8217;t say &#8220;I think it&#8217;s the most delicious thing ever!&#8221; It wasn&#8217;t bad.<\/p>\n<p>I&#8217;ve been trying to cut back on drinking diet soda, and these days I only have it when I&#8217;m getting a &#8220;combo&#8221; of some sort at a restaurant and they hand me a drink cup for the soda fountain.<\/p>\n<p>Kombucha is an interesting hybrid: slightly carbonated, and slightly sweetened, thanks to the fermentation process required to make it. I&#8217;m not going to explain the whole thing here, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Kombucha\">but feel free to read more about it<\/a>.<\/p>\n<p>This made a good alternative to soda. I&#8217;m not going to speak to whether this beverage is going to save my life, cure cancer, or whatever. I&#8217;m just looking for something relatively low calorie to enjoy. Since the fermentation &#8220;eats&#8221; most of the sugar in the sweet tea, you&#8217;re left with something more tangy, but still very tasty with very few calories. I&#8217;ll take it!<\/p>\n<p>For the cost of two bottles of kombucha from Whole Foods, I got what I needed to make my own at home.<\/p>\n<div id=\"attachment_4748\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/thevollmerfamily.com\/MajorMom\/2016\/10\/its-not-hooch-its-booch.html\/img_7354\" rel=\"attachment wp-att-4748\"><img aria-describedby=\"caption-attachment-4748\" loading=\"lazy\" class=\"wp-image-4748 size-large\" src=\"http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7354-1024x768.jpg\" alt=\"img_7354\" width=\"630\" height=\"473\" srcset=\"http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7354-1024x768.jpg 1024w, http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7354-300x225.jpg 300w, http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7354-768x576.jpg 768w\" sizes=\"(max-width: 630px) 100vw, 630px\" \/><\/a><p id=\"caption-attachment-4748\" class=\"wp-caption-text\">The fuzzy white thing in that bag is the SCOBY, which stands for &#8220;symbiotic colony of bacteria and yeast&#8221;. I ordered this one through Amazon for about $6. The liquid it&#8217;s suspended in is raw kombucha and is critical for a good start to your own fermentation.<\/p><\/div>\n<div id=\"attachment_4745\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/thevollmerfamily.com\/MajorMom\/2016\/10\/its-not-hooch-its-booch.html\/img_7355\" rel=\"attachment wp-att-4745\"><img aria-describedby=\"caption-attachment-4745\" loading=\"lazy\" class=\"wp-image-4745 size-large\" src=\"http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7355-1024x768.jpg\" alt=\"img_7355\" width=\"630\" height=\"473\" srcset=\"http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7355-1024x768.jpg 1024w, http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7355-300x225.jpg 300w, http:\/\/thevollmerfamily.com\/MajorMom\/wp-content\/uploads\/2016\/10\/IMG_7355-768x576.jpg 768w\" sizes=\"(max-width: 630px) 100vw, 630px\" \/><\/a><p id=\"caption-attachment-4745\" class=\"wp-caption-text\">I had this other stuff on hand: a 1\/2 gallon jar, coffee filter for the top, 5 tea bags (I used Twinings Earl Grey, since it&#8217;s what I had on hand), and sugar.<\/p><\/div>\n<p>I brewed the tea at a concentration of 5 tea bags per 4 cups of water. I then mixed in a cup of sugar, stirring it to dissolve the crystals. I then added it to the jar with enough ice to mostly fill the jar.
